It's dinner time in a while and I am thinking of making Adobo! Adobo is a Filipino dish made out of meat or vegetables cooked in vinegar, soy sauce, garlic, peppercorns and bay leaves. It is almost like an everyday food found in every Filipino table. It may be served during lunch or dinner with steamed rice.

In meat Adobo, I prefer Pork (Belly or Ribs)
and for the vegetables, I like Sitaw (String Beans) Adobo and Kangkong (Water
Spinach) Adobo.

You may find these vegetables in Asian shops or markets. I used to buy some in Mandurah Oriental Store. Now I get them in Canning Vale Market in Perth.
I love Adobo but I have never cooked nor known how to
cook adobo when I was still in the Philippines. It’s just when I have lived
here that I have learned how to. My sister or my mom normally cooked it for me.
The first time I cooked it, I never thought my husband would like it. I normally retain some sauce on it since my husband loves the sauce mixed in his steamed rice.
So, this is how I do it. I cube about half a kilo of either Pork Ribs or Pork Belly into about 1.5 inches. In a big casserole or pan, I roughly combine Pork, about 2 cloves crushed garlic, about a teaspoon of peppercorns, about 2 pcs bay leaves, about 1/4 cup vinegar, 1/4 cup soy sauce and about half a cup water altogether. Let it boil then turn heat into low and simmer until meat is tender and sauce is not runny. Have a taste you may add salt if you desire. Serve with steamed rice.
Sometimes I make my Adobo my friend Janice's way. It tastes as nice as well. After boiling the meat and ingredients, when the liquid is half in quantity, I take out meat, then shallow fry them quickly in a separate pan. When done, put back shallow fried meat to the sauce and let it simmer until desired amount of sauce is achieved. Serve hot over steamed rice.
